For Winnipeg water, the following additions are suggested:
Mash:
1.0g Gypsum
3.6g Calcium Chloride
0.9g Epsom Salt
2.5 ml Lactic Acid
Yeast
Fermentis Saflager W-34/70 – 1 pkg included with kit.
Ferment between 12°C – 18°C (53.6-64.4°F) – Ideally at the lower end of this range.
If you don’t have the ability to control fermentation temperature, W-34/70 is a relatively forgiving yeast, so you should be fine putting the fermenter in a relatively cool place like a basement or closet.
Other options are pressure fermentation, or using an ale yeast.
