Wassail Pork Buttons
Wassail Pork Buttons – Submitted By Sean Richens
1 cup ale, not too hoppy
3/4 cup applesauce
1/3 cup Marsala wine (or mead, or Port, or Sherry)
3″ stick of cinnamon
4 cloves
1 black cardamom pod, gently crushed
Boil gently to reduce by half. Add:
1/3 cup honey
1 tsp. salt
Marinade pork buttons in some of sauce. Cook slowly (350F), turning and basting with remaining sauce, for 1 hour.
Deglaze pan with ale, add 1 tbsp. flour pre mixed with cold beer and cook until thickened. Add to pork buttons and toss.
